Life at BAO with Alice Lin, from Baos to Karaoke

At BAO Marylebone, a much-loved Tawiwanses resturant, has become a favourite desitnation for diners seeking both flavour and experience. From fluffy baos and delicious noodles to a lively KTV room. It’s a restaurant that feels warm and welcoming from the moment you arrive, and never lacks excitement making every visit feel like an occasion.  

We had the pleasure of sitting down with Alice Lin to hear about her journey, her favourite menu items, and what it's like to lead the team behind one of St Christopher's Place most popular dining destinations. 

Can you please introduce yourself, your role, and the brand?  

My name is Alice, I’m Multi-Site GM at BAO, a Taiwanese restaurant offers selections of Baos, Noodles and Karaoke room!   

What’s one thing you'd love customers to know about what goes on behind the scenes?  

We have a wonderfully diverse team that works hard every day to deliver the best possible experience to our guests. There’s a real sense of community here, people genuinely look after one another, and you see true friendships being formed behind the scenes.  

 Is there a BAO moment or story that you tell friends because it’s just too good not to share?  

There’s a solo diner who used to come in regularly during lunchtime for our £15 set menu. He always kept his receipts to collect BAOCoins through our digital rewards program, BAOVerse. One day, he told us, “I’m bringing my team in next week for karaoke. I’ve saved up enough BAOCoins to redeem whole crates of Taiwanese beer!” It was such a wholesome moment.  

If BAO had a mascot, what would it be and why?  

A lonely man slurping noodles and sipping bubble tea, because that captures the cosy, comforting essence of BAO. It’s a place where even solo diners feel totally at home.  

Can you share a goal you have for the store/team this year?  

To host more and more parties in our KTV rooms before the year ends, we want to make BAO the go-to spot for unforgettable group celebrations.  

 What’s your go-to pick me up drink/snack during a busy shift?  

A hot chocolate in a Cup + Lid for a quick mood boost and when I need an extra hit of energy, I’ll grab a tiramisu chocolate. If I’m lucky, I’ll sneak out for mutton rolls at Hoppers.
