This month, we turn the spotlight on Patty & Bun, known for its bold approach to burgers, quality ingredients and unmistakable character. We meet Harriet, Operations Manager at Patty & Bun, who has grown alongside the brand since joining in 2017. After starting in Notting Hill and later leading the James Street restaurant at St Christopher’s Place, Harriet now oversees operations across the business.
She shares her perspective on what makes Patty & Bun stand out, how consistency is maintained across locations, and why the St Christopher’s Place site continues to hold a special place in the brand’s story.

Can you tell us about yourself and what you do?
I'm Harriet & I am the Operations Manager for Patty Bun! I look after all our bricks & mortar sites along with our General Managers and make sure they are all running as smoothly as possible!
Can you tell us bait about your journey at Patty Bun?
I started off working for P&B in 2017 in our Notting Hill shop and then a year later moved to James St as General Manager where I did a good old' stint of 3 years in this site, so you could say our St Christophers place site definitely has a special place in my heart! I then moved onto our Hackney site before ending up working in Head Office in Operations.
From an operations perspective, what unique opportunities or challenges does running a store at St Christopher’s Place present?
When we first opened on the street we were the only restaurant on James St, now St Christophers place is a vibrant hub full of lots of wonderful shops and restaurants. The teams have such a good rapport with other restaurants on the road but also this does mean that there is plenty more competition as well!
How do you maintain quality and consistency across all locations?
By constantly testing all the burgers! Still even after all these years, I absolutely love all of our burgers and isn't a chore doing all the taste testing, especially making sure I get a side of P&B mayo with all food (my absolute favourite!). And most importantly, we have really great managers and chefs that really care about our teams, our customers and the product we serve - we would be nothing without them!
Are there any behind -the-scene moments or stories from the St Christopher’s Place store that stand out to you?
Definitely some funny moments over the years! The launch parties of all of our special burgers were always my favourite!
How do you see Patty Bun evolving in this location over the next few years?
We really want to just keep doing what we do best, serving out great burgers with great vibes. There will definitely be some fun special burgers collabs along the way too!
